A tomahawk just off the embers, a glass of deep red. Some pairs need no introduction, only an understanding of why they work.

Every night some table orders the tomahawk, and almost every one asks the same question: what should we drink with it? The usual answer is red. The reason sits right on your tongue: tannin.

Vị chát và miếng thịtTannin and the meat

The grip in red wine comes from tannins, found in grape skins and seeds. On their own, tannins dry and tighten the mouth. Meet the protein and fat of grilled meat, though, and they soften, while each sip seems to wash the richness from your palate. The meat calms the wine, the wine lightens the meat, and each keeps the other going.

The charred crust from the embers plays its part too. Smoke and caramelised edges find a friend in wines with notes of oak, black pepper and dark fruit.

Miếng thịt càng đậm, ly vang càng phải có xương sống.The bolder the cut, the more backbone the wine needs.

Chai nào cho miếng nàoWhich bottle for which cut

For a tomahawk or a well-marbled dry-aged cut, Cabernet Sauvignon is the classic: firm tannins, blackcurrant and cedar. Syrah, called Shiraz in Australia, brings pepper and smoke that suit charcoal beautifully. Argentine Malbec is softer and fruitier, easy to drink yet strong enough for a thick steak.

Lamb has its own character and wants a finer wine that won’t drown it.

Vang đỏ và mùa hè Hà NộiRed wine and the Hanoi heat

Red wine is best at around 16 to 18°C, cooler than a Hanoi room for most of the year. Don’t hesitate to ask us to chill your red for a few minutes. The wine turns smoother and the fruit comes forward.
